Cheese, regardless of its name, language, or dialect, its origin, or who makes it, remains one of the most beloved dairy products.

Whether we discuss the Feta of the Greeks, the beyaz peynir of the Turks, or the “sirul” of the Serbs, “telemeaua” largely follows recipes passed down for centuries. Yet, in the rich world of cheese flavors and aromas, “Telemeaua de Ibănești” has its own special characteristics.

First of all, it is exclusively made from milk collected from mountain breeders reared on the pastures of the Mureș and Gurghiu valleys, meticulously nourished to enhance the milk’s flavor. “Telemeaua de Ibănești” is not merely salted like other “telemea”; instead, it is brined in Orșova brine, naturally sourced from a spring locals have used for decades to flavor their cheese or homemade dishes.

Moreover, to round out the picture and leave no room for doubt regarding the quality or taste of “Telemeaua de Ibănești,” it stands as the only Romanian product certified at the European Union level as a Protected Designation of Origin.

However, what truly convinces you, beyond the narrative and technical specifics, is the taste – creamy, rich, velvety, a flavor that captivates not just your taste buds but also your mind, compelling you to reconsider your standards when it comes to “telemea.”

Telemea de Ibănești is part of the Telemea de Ibănești range — the first Romanian product with a Protected Designation of Origin (PDO) recognized by the European Union, a certification obtained in 2016.

The PDO certification guarantees that the product is made exclusively within the designated geographical area (the communes of Ibănești, Gurghiu and Hodac, Mureș county), from milk collected only from farms located in this area, following a specific, documented traditional recipe.

The certification dossier submitted to the European Commission ran to more than 400 pages and demonstrated that the unique taste and characteristics of Telemea de Ibănești are inseparable from the local territory and traditions — a recipe that cannot be reproduced anywhere else in the world.

The PDO symbol is protected by European law. Any product sold under the name “Telemea de Ibănești” must comply with the product specification registered with the European Commission.
