When discussing “urda,” there are several key points to consider. Firstly, it is renowned as the healthiest dairy product due to its extremely low fat content. However, as is often the case, the fat content is not necessarily its most significant characteristic. Primarily, when you taste a piece of “urda,” you are enveloped by its flavor. It boasts a velvety texture with an unmistakable, rich, and fresh taste that elicits the most admiring exclamations.
Urda is a product of high nutritional and biological value, it is low in fat but rich in protein, which contributes to its exceptional quality. Similar to Italian ricotta, Urda is a dairy by-product crafted from the remnants of other cheeses, specifically from the curd of milk after the whey has been separated.
Here it is usually used in combination with dill, which is grated into a soft paste that is best served on a slice of crusty bread, but it also tastes good with a slice of green onion, a tomato and two or three radishes.
