Mozzarella is a fresh, unripened cheese from southern Italy. Indeed, the Italians are its inventors—the grandparents, the mother, and the father of this specialty in every sense of the word. It’s often said that “authentic” mozzarella is crafted from buffalo milk, distinguished from cow’s milk by its texture and more pronounced flavor, both attributed to the high fat content of buffalo milk. Here in Ibănești, we produce mozzarella from cow’s milk. Nevertheless, this doesn’t diminish the taste or the rich aroma of fresh milk. This is because we adhere fully to the mozzarella-making process. We immerse the milk curd in warm water, then stretch it until we achieve the desired consistency. You can find Mozzarella de Ibănești available in 180-gram and 500-gram portions, or in packs weighing approximately 2 kilograms for the HORECA industry.
